It’s been on the back-burner for a while, but I can sadly confirm that our Head Chef, Louis Byrne has made the decision to move back to managing projects for his well known brother Aidan Byrne.
We have really enjoyed working with Louis, he brought with him a raft of experience and ideas, which have inspired us all in the short time he was with us. Louis has left us on good terms, and we’re fully understanding that blood is thicker than water.
In the meantime, you can still expect high standards of food and service at Chez Nous, as our kitchen is now in the hands of Gary Hinchcliffe who was Sous Chef under Louis. He is no stranger to heading-up busy kitchens, having previously worked at the Joint Head Chef at Lime Tree Didsbury - expect great things!
Thanks to all our guests for the compliments on our food and service - it’s what keeps us going. We’d also like to wish Louis the best of luck for the future.
